Hash Brown Casserole

I got this recipe from Cooking Light and it's one of my favorites. It goes great with turkey meatloaf or grilled chicken and really satisfies my carb cravings.


1 Cup Thinly Sliced Green Onions
1 Cup (4 oz) Reduced Fat Extra Sharp Cheddar Cheese Shredded
2 T Stick Margarine Melted
1/4 t Pepper
1 (32 oz) package frozen shredded hash browns, thawed
1 (16 oz) Carton Fat Free Sour Cream
1 can reduced fat, reduced sodium Cream of Mushroom Soup, undiluted
cooking spray
1/4 t Paprika

Preheat oven to 350 degrees.
Combine first 7 ingredients in a bowl. Spoon into a 9x13 baking dish coated with cooking spray. Sprinkle with paprika. Cook for 1 hour or until bubbly.
